That’s crazy!

I was a bit skeptical when I heard about a cake recipe you can make in one bowl that does not include eggs. You just mix the dry ingredients, make three holes and add the vinegar, oil and vanilla. Pour water over, stir and bake. That’s it!

I was pleasantly surprised at how delicious this dark chocolate cake is. It has now become the chocolate cake I bake most often.

Crazy Cake

Mix together:

1-1/2 cups flour

1 cup sugar

1 teaspoon salt (or less)

1 teaspoon baking soda

3 heaping tablespoons cocoa powder

Make 3 holes in the flour mixture.

In one hole, place 1 tablespoon vinegar

In one hole, place 1/3 cup oil

In one hole, place 1 teaspoon vanilla

Pour 1 cup of water over and mix.

Pour into ungreased 8-inch cake pan and bake 350 degrees for 30 minutes.

Frost and serve in pan.

Chocolate Butter Frosting

Cream together: 3 tablespoons butter with 3 tablespoons cocoa powder

Add: 1-1/3 cups confectioners sugar, slowing stirring in a total of one tablespoon of milk, working it until it’s at the right consistency. Blend in 1/2 teaspoon vanilla.

Note: For a chocolate-coffee frosting use coffee in place of the milk and vanilla.
