Healthy Food for Two: Creamy cauliflower soup to reduce inflammation

Turmeric contains a compound called curcumin that helps to reduce inflammation. Garlic has been shown to have the ability to shut off the pathways that lead to inflammation. Edamame (shelled soybeans), is a high-quality complete protein therefore, it is ideal food for vegetarians and vegans. Compounds called isoflavones found in edamame can also help lower inflammation.

Leafy green vegetables like the chard in this recipe are filled with a compound known as chlorophyll, which has an alkalizing effect on the body. This alkalizing action can help to significantly reduce inflammation in the body. The beneficial chlorophyll is preserved within a very short time of cooking or steaming and absorption of chlorophyll from veggies may actually be increased.

Cream of cauliflower

3 cups of water

2 cups cauliflower, chopped

Daikon radish 3 inches long and 1.5 inches wide, chopped

1 medium carrot, chopped

1/3 cup leek, sliced

2 big leaves Swiss chard, rinsed and roughly chopped. Stalks thinly sliced.

2 medium cloves garlic, minced

1 tablespoon safflower oil

1/4 teaspoon coriander powder

dash turmeric powder

1/2 teaspoon fresh thyme, stems removed

1/2 teaspoon each: salt and freshly ground black pepper

3/4 cup ready-to-eat edamame, rinsed

1/2 teaspoon lemon juice

In a medium pot, boil water and add cauliflower, Daikon, carrot and leek. Cook for 10 minutes. Roast garlic with oil and add coriander and turmeric, sizzling till aromatic. Add to the boiling broth. Place the Swiss chard in a sieve suspended over the pot and steam till soft, but bright color (about 4 minutes) and set aside. Add thyme to the broth and cook for 1 minute. When ready, cool the broth off and place in the blender. Blend till creamy and transfer back to the pot, bringing it to boil. Add edamame and cook for about 30 seconds, season with salt and pepper. Serve hot sprinkled with lemon juice and garnish with Swiss chard.
